• 1 large chicken breast, skin removed and chopped into small pieces
  • 1/4 cup flour
  • salt (for seasoning)
  • pepper (for seasoning)
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 2 tsp garlic, minced
  • 400g tomatoes, chopped
  • 1 tsp oregano, dried
  • pinch of basil, dried
  • 1 Tbsp brown sugar
  • 1 tsp chicken stock powder
  • 1 cup hot water
  • 1-2 cups dried pasta
  • 1 cup grated cheese


Mix the salt and pepper into the flour, then toss the chicken pieces into this until lightly covered. Discard the leftover flour that does not stick to the chicken.

Boil the pasta in a pot according to the instructions on the packet. Set aside when done.

Heat the oil in a pan, and cook the chicken until cooked through. Add the onion and garlic, cooking until soft.

Stir in the tomatoes, herbs, and sugar. Mix the stock powder into the cup of hot water until mixed through, and add this to the pan. Simmer this mixture gently, until the sauce has thickened slightly.

Spoon the sauce mixture over the pasta, and top with grated cheese.
