Ingredients

  • 2 ½ cups plain flour
  • 4 tsp baking powder
  • 50gms dairy-free spread
  • 1 egg
  • ½ cup grated edam cheese
  • Two thirds cup lactose-free milk or soy milk
  • ½ cup plain unsweetened acidophilus yoghurt

Method

Turn the oven to 190C and put the baking tray in the oven to heat up while you are preparing the mixture.

Put the flour and baking powder into a bowl and rub the spread in with your fingertips. Add the grated cheese, egg, milk and yoghurt. Mix with a knife until ingredients are combined but don’t over mix.

Turn out on to a floured surface and flatten and shape into a rectangle approx 250cm x 160cm – ‘give or take’. Cut into 12 pieces.

Sprinkle a little flour over the hot baking tray and place the scones on it. Bake 190C for 15mins.
