• 4 eggs
  • 4 egg whites
  • 1 cup milk
  • 2 Tbsp mustard
  • 1 tsp fresh rosemary, finely ground
  • ¼ tsp ground pepper
  • 5 cups spinach, chopped
  • 4-6 slices of bread cut into 1 inch cubes
  • 1 cup bacon, diced
  • ½ cup capsicum, chopped
  • ¾ cup cheese, grated


Preheat oven to 180°C. Grease a 28cm x 46cm baking dish.

Whisk eggs, egg whites and milk in a bowl. Add mustard, rosemary and pepper; mix until combined. Toss through this mixture the spinach, bread, bacon and capsicum, until well coated. Transfer to the prepared baking dish. Cover with a lid or foil.

Bake until the liquid has set, 40 to 45 minutes. Uncover, sprinkle with cheese and continue baking until golden on top, 15 to 20 minutes more.
