• 2 cups plain flour
  • 2 tsp baking powder
  • 2 eggs
  • ½ cup sugar
  • ½ tsp salt (optional)
  • 1 Tbsp butter or oil
  • 1 ½ cup liquid (milk, soymilk, or water)


Mix dry ingredients in a bowl. Whisk eggs until mixed thoroughly. Pour into dry ingredients, along with liquid and oil. Mix until batter is smooth.

Grease a pan with butter or non-dairy spread on a medium-low heat. Place small spoonfuls of batter into pan or large spoonfuls depending on the size of pancake you desire. Flip pancake when small bubbles appear on the pancake surface. Cook both sides until light golden brown.
