Ingredients

  • 1 cup white flour
  • 1 cup wholemeal flour
  • 2 tsp baking powder
  • 1/2 cup sugar
  • 3 tsp peanut butter
  • 1 tsp margarine or non-dairy alternative
  • 2 ripe, mashed bananas
  • 1 egg
  • 1 cup milk (or substitute - soy milk, rice milk, water)

Method

Mix dry ingredients together in a bowl. Mix in egg, banana, peanut butter, margarine, and milk (or substitute). Mix ingredients gently, until just moist.

Spoon into greased 12-cup muffin tin.

Bake at 180 degrees for 15 minutes.
