For the marinade

  •     1 Tbsp grated ginger
  •     1 small onion
  •     1 ½ tsp coriander (dried)
  •     1 ½ tsp cumin (dried)
  •     ½ tsp chilli flakes/powder (dried)
  •     1 Tbsp oil
  •     2 Tbsp water

For the curry

  •     400g beef schnitzel, cubed
  •     1 Tbsp oil
  •     2 potatoes, scrubbed and cubed
  •     1 tsp beef stock powder
  •     1 C water
  •     2 tsp soy sauce
  •     165 mls coconut cream
  •     1 cup green beans or peas


Combine all the marinade ingredients in a food processor and blend until a paste is formed.

Mix the paste with the meat and set aside in a covered dish overnight.

Heat the oil in a frying pan or pot and fry the marinated meat.

When the meat has browned, add the potatoes, beef stock, and water.

Simmer for 10-15 minutes or until the potabes are cooked.

Reduce the heat and add the coconut cream, beans, and soy sauce. Stir until heated through.
