Ingredients

  • 2 ¼ C desiccated coconut
  • 2 ¼ C white flour
  • 3 tsps baking powder
  • 1 C sugar
  • ¾ C dried apricots, finely chopped
  • 2 ¼ C milk

Method

Mix the dry ingredients together in a bowl.

Add the milk and stir until just mixed.

Pour mixture into a greased loaf tin and bake at 160C for 50 minutes.
