For the base

  • 100g butter, melted
  • 1 packet plain biscuits

For the filling

  • 250g cream cheese
  • 100g sour cream
  • 50g butter, melted
  • 50g white sugar
  • 1 tsp vanilla essence
  • 250g block white chocolate
  • 100g whipped cream


Prepare the base first by blending the biscuits in a food processor until grainy. Add the melted butter and process further until a dough forms. Press the dough into a 23cm tin or dish and set aside in the refrigerator for the timebeing.

Prepare the filling by adding to the food processor the butter, sugar, cream cheese, sour cream, and vanilla essence.

Gently melt the chocolate in a bowl in the microwave, in small bursts. It does not need to be completely melted, just softened enough to blend. Scrape the softened chocolate into the food processor and blend.

Gently stir the whipped cream through the filling mixture.

Spread this filling over the prepared base and allow to set in the refrigerator for at least 2 hours before serving.
